Guinness  and lime chicken


  • 300 ml Guinness beer

  • 1 whole chicken for grilling

  • 2tbsp malt vinegar (or sherry vinegar)

  • 2 tbsp sugar

  • 1 tsp cornstarch

  • 1 small cube chocolate

  • salt,pepper

  • 1tbsp lime zest



The idea of a beer sauce is not only easy to play with, it's also not difficult to cook.

First rub the chicken with salt and pepper, then grill it in the oven for 45 minutes. If it's done before then, set it aside.

Meanwhile make the beer sauce, heat the beer over medium heat, but be careful as it boils quickly. Add the vinegar and sugar and simmer over a medium heat for 15 minutes, stirring frequently. In a shot glass, mix the cornstarch with a little cold water and slowly stir into the sauce. After a few minutes, reduce the heat to low and stir in the chocolate while still hot. This balances the slightly bitter taste of the beer with the chocolate flavour. You can grill it with the chicken for a few minutes before serving but it's also perfect as a stand-alone sauce. In the last step, add the lime zest.

I recommend roast potatoes with onions.
