Nordic Apple Cake



for 1 cake (about 12 pieces)

  • 175 g butter and some for the form

  • 150 g sugar

  • 1 pinch salt

  • 1 pinch ground vanilla

  • 3 eggs (size M)

  • 100 g coconut flour

  • 200 g wheat flour and some for the form

  • 2 tsp cinnamon

  • 2 tsp baking powder

  • 100 ml milk

  • 1 kg apple

  • 1-3 tbsp apricot jam

  • icing sugar



Preheat oven to 180 degrees. Line the bottom of the round cake pan with baking paper, butter and flour the sides. For the dough, beat butter, sugar, salt and vanilla for 5 minutes until creamy. Beat in eggs one at a time for half a minute. Mix coconut flour, wheat flour, cinnamon and baking powder and stir in. Then add the milk and stir in.

Peel and core about two-thirds of the apple, cut into small cubes and fold into the batter. Pour the batter into the round cake pan. Quarter the remaining apples, core and cut into narrow wedges. Arrange the wedges in a circle on the dough. Mix apricot jam with a little water and brush the apple wedges with it.

Bake the apple pie on the second rack from the bottom for 50-60 minutes. Brush with jam again halfway through the baking time. Then let cool for 1 hour and finally dust with powdered sugar.
