Growing up in a village with my grandma's large walnut tree was like living in a culinary wonderland. The taste of home-grown walnuts still lingers in my mouth, each bite a trip down memory lane. In our village, some walnut trees produced nuts so robust they were a challenge to crack open. And let's not forget the old men who would concoct moonshine infused with young walnuts, resulting in a dark green, flavorful elixir. Ah, village life—truly golden times that inspired this Walnut Cake recipe.


Ingredients


  • 1 cup white flour

  • 1 cup milk

  • 1 egg

  • 2 tablespoons olive oil

  • 1/2 cup sugar ( or 1 cup depends on you )

  • 1 tsp vanilla sugar

  • 1 tsp baking powder

  • Pinch of salt

  • Pinch of ground cardamom

  • 1 cup walnuts, ground

  • Optional: Additional walnuts for topping


Steps


Preheat your oven to 220°C (428°F). Line a round baking tray with baking paper.

In a bowl, mix together the dry ingredients: white flour, sugar, vanilla sugar, baking powder, salt, and ground cardamom. Set aside.

In another bowl, whisk together the wet ingredients: milk, egg, and olive oil.

Carefully fold the dry ingredients into the wet mixture until just combined.

Pour the batter into the prepared baking tray.

Place the tray in the preheated oven and immediately reduce the temperature to 160°C (320°F).

Bake for 20-30 minutes. The cake is done when a wooden stick inserted into the center comes out clean and the top is a nice brown color.

Allow the cake to cool before slicing.
